The cookbook is reasonably priced at $12.95 per book and would make a memorable gift for anyone to have. The recipes are from all over the world and very “cook-friendly”. What a great gift it would make for that winter bride or child that is headed back to their apartment just in time for college to begin.

The recipe below is from the wife of the Executive Director at Fossil Rim. This recipe comes all the way from South Africa and is one of my favorites. This makes a good crock pot recipe if you place the crock pot on “Low” for the day while you are out and about.

 
 
Curry and Rice

1 1⁄2 lb stewing beef, cubed 1⁄2 c flour
2 tbs oil 5 tbs margarine
2 onions, cut into large rings 400 ml (1 2/3 c) boiling water
1⁄2 c raisins 2 tbs coconut, shredded
1 tsp salt 1⁄2 tsp garlic powder
1⁄2 tsp masala seasoning 1 tbs mild curry powder
1 tsp black pepper 1⁄2 tsp ground cumin
20 ml (1 tbs + 1 tsp) lemon juice 4 tbs fruit chutney
 
 

Roll the meat in flour. Heat the oil and margarine and fry the meat and onions in it. Pour 1 1/3 c of boiling water over the meat and stir in the raisins and coconut. Mix all the spices well and stir well. Add the lemon juice and chutney. Add 1/3 c boiling water to the spices and stir well before stirring into the meat. Simmer for about 1 1⁄2 hours over low heat or until meat is very tender. Serve with rice, chutney and finely chopped onions, tomatoes.

(Optional - bananas, shredded coconut and chopped hard boiled eggs.)
